Local Mom Profile: Welcome Back to the Table

Maureen Burke knows all too well the challenges of those with severe food allergies. She spent most of her life sick and misdiagnosed for Celiac Disease and a milk allergy. Once she knew what foods she had to avoid to stay healthy, the thought of eating out at a restaurant was daunting at best, and often times not worth the risk. Because of her personal experiences, as well as those of her nephew with strict dietary requirements, Maureen decided to take matters into her own hands.

In 2009, she self-funded One Dish Cuisine (ODC), and began preparing gluten and allergen-free meals for restaurants, hospitals and grocery stores. Her color-coded labeling system identified a meal as gluten-free or free of other top allergens, such as nuts. This made it easy for everyone, even a child who can’t read, to identify the meal as safe for them to eat.
