Make Ahead Breakfast Tortilla Casserole

Ingredients

  • 12 (6inch) corn tortillas
  • 2/3 cupchopped green onions
  • 1 (4ounce) can sliced black olives, drained
  • 2 (4ounce) cans diced green chile peppers, drained
  • 1 (4ounce) jar diced pimento peppers, drained
  • 8 ouncesMonterey Jack cheese, shredded
  • 8 ouncesCheddar cheese, shredded
  • 5 eggs
  • 2 cupsmilk
  • 1 (8ounce) jar salsa

Directions

1.   Preheat oven 350 degrees.

2.   Lightlygrease a 9×13 inch baking dish. Line the bottom of the dish with 4 tortillas.Sprinkle with 1/3 each of the green onions, olives, chile peppers, pimentopeppers, Monterey Jack cheese, and Cheddar cheese. Repeat twice with theremaining ingredients.

3.   In a large bowl, beat together eggs, milk, and salsa.Pour over the layered ingredients. Cover with plastic wrap, and refrigerate overnight.

4.   Remove the casserole from refrigerator, andremove plastic wrap.

5.   Bake 45 to 60 minutes in the preheated oven.

Make Ahead French Toast Souffle

Ingredients

  • 10 cupswhite bread cubes
  • 1 (8ounce) package low-fat cream cheese, softened
  • 8 eggs
  • 1 1/2 cupsmilk
  • 2/3 cup half-and-halfcream
  • 1/2 cupmaple syrup
  • 1/2teaspoon vanilla extract
  • 2tablespoons confectioners’ sugar

Directions

1.   Preheat oven to 375 degrees F

2.   Place bread cubes in a lightly greased 9×13 inchbaking pan.

3.   In a large bowl, beat cream cheese with anelectric mixer at medium speed until smooth. Add eggs one at a time,mixing well after each addition. Stir in milk, half and half, maple syrup,and vanilla until mixture is smooth.

4.   Pour cream cheese mixture over thebread; cover, and refrigerate overnight.

5.   The next morning, remove souffle fromrefrigerator, and let stand at room temperature for 30 minutes.

6.   Bake, uncovered, for 30 minutes in the preheatedoven, or until a knife inserted in the center comes out clean. Sprinklewith confectioners’ sugar, and serve warm.
