Guacamole

Use a large fork or potato masher to gently crush ripe avocados into this classic Mexican avocado relish. Serve guacamole as an accompaniment to tacos, tortillas chips, cut-up raw vegetables, and grilled poultry.

Using the coarsest side of a 4-sided grater, grate into a medium bowl or finely dice:

½ small white onion

1-2 fresh jalapeno peppers, or to taste

1 medium, firm ripe tomato

Using a large knife, halve:

2 large or 3 medium, firm ripe tomatoes

Remove the avocado pits, then use a large spoon to scoop the flesh into the bowl with the onion mixture. Use a large fork or potato masher to coarsely mash the avocados together with the onion mixture. Stir in:

2 Tbsp chopped fresh cilantro

1 Tbsp fresh lime juice

½ tsp salt, or to taste

Cover with plastic wrap placed directly on the surface of the mixture and let stand for a few minutes. Serve garnished with:

Fresh cilantro sprigs
