Makes 9 servings, about ¾ cup each.
Combine in a large skillet, and cover:
1½ lb trimmed fresh or frozen green beans, thawed
½ cup red onion slices
½ cup olive oil
Cook on medium heat 10-12 minutes or until vegetables are crisp-tender, stirring frequently. Remove from heat.
Stir in:
1 package (4oz) crumbled Feta cheese
