Broiled Tomatoes

Makes 4 servings

Preheat broiler. Lightly oil a rimmed baking sheet. Slice horizontally into slices ½ to 1 inch thick:

4 large ripe tomatoes

Season with:

1 t. salt

¼ t. ground black pepper

Place on a baking sheet and sprinkle with:

½ c. grated Parmesan cheese

2 T. olive oil

Broil about 5 inches from the heat until golden on top and heated through, about 5 minutes.
