Pumpkin Mousse
Makes: 6 servings
Serving Size: 1/2 cup
2 cups canned pumpkin (not pumpkin pie filling)
1 tsp. honey
2 tsp. cinnamon
2 tsp. grated lemon peel
1 cup fat-free ricotta cheese
In a medium bowl, combine the pumpkin, honey,
cinnamon and lemon peel. Mix well. Fold in the
ricotta cheese. Refrigerate for 1 hour and serve.
